UPDATE!! Some information about the engine from the owner Josh Maschhoff: "We run at 150 psi. The Engine weighs around 42500lbs loaded with coal and water. Torque is 3000 ft lbs at 240 rpm The sled was definitely weighted and i know from experience first hand that the engine can drag the sled with the weight box all the way up and the bars dropped." Don't worry about the fire hazard. What you see is a very exaggerated amount of burning embers coming from the smokestack. The sparks are created as a night spectacle for entertainment. Before this pull, sawdust was added to the firebox to enhance the night "spark show." Having said that back in the day there was always a risk of fire. There was less of a risk during plowing season. The highest risk was during harvest when the steam engines returned to the fields to thresh (separate) the grain from their stalks, in typically dry fields. Weeks before the steam engines arrived the grain was cut and bundled by binders. These mechanized machines looked the front of modern "combines" but binders only cut and a bound the grain. The crops were cut close to the ground by the binder leaving the grain (heads) connected to the shaft. These bundles were approximately 8" in diameter and were about 3' tall. After the crops were cut, these bundles were stacked in small piles called "shocks." These shocks contained maybe 7 to 12 bundles and scattered all over the field. The shocks were left in the field until the grain was dry enough to separate. The threshermen traveled from farm to farm to thresh each farmers grain. Most individual farmers could not afford a steam traction engine so the threshermen provided this service to the farmer. On threshing day wagons were brought to the field and would load the shocks of grain and haul it to the threshing machine where it was placed quite a distance (and upwind) from the steam engine that provided the power for the machine to do its work. The steam engine provided power to the threshing machine via an extremely long belt to keep any embers away from the dry chaff and straw that was separated from the grain. The shock piles of crop were gathered as they were needed and not all gathered up and piled in one place at one time. That way, if there was a fire it would be small and contained to a small portion of the harvest and not all of it. The steam engines were also outfitted spark arresters while threshing. Not to mention these steam engines required water so water was generally available should a fire break out. Also the steam engines would burn the straw which was waste from process of threshing the grain. One day, I hope to make a video of these separate processes that is now preformed by a single combine. As for now, if you watch the movie "Of Mice and Men" with Gary Sinise and John Malkovich you can see threshing in action. I have posted another video of it that includes three synchronized videos that were shot from three different angles that night. (One angle is shot from a drone flying high in the air that can be spotted above the engine towards the end of this video. How To Cook A Cheap Steak Vs. An Expensive Steak
Here is what you'll need! PAN-SEARED FLAP STEAK Servings: 2-4 INGREDIENTS 1 pound flap meat ½ cup low-sodium soy sauce 2 tablespoons ground black pepper 4 large cloves garlic 3 tablespoons vegetable oil Gallon-sized plastic zipper bag Cast-iron skillet PREPARATION 1. Place flap meat, soy sauce, and pepper in the gallon-sized plastic bag. 2. Place garlic cloves on a flat surface and crush with hand using palm. Just enough to crack the clove open a bit. 3. Add garlic to bag and seal, making sure to remove as much air from the bag as possible. 4. Massage the contents of the bag to ensure the soy sauce mixture is completely coating the meat. 5. Leave bag in the refrigerator to marinate for 1-12 hours. 6. Place cast-iron skillet in cool oven and preheat to 475°F/240°C. 7. Remove steak from marinade and thoroughly pat dry. 8. Once oven is preheated, transfer skillet to stovetop and place on place on high heat. 9. Add oil to skillet. 10. Once oil starts to shimmer, but before it starts to smoke, carefully place steak in pan. 11. Flip steak every 30 seconds to a minute, moving the steak to the hottest parts of the pan each time. 12. Once internal temperature reaches a few degrees below 135°F/57°C remove steak from pan and place on a cutting board to rest. 13. Let rest for 8-10 minutes. 14. Slice steak against the grain and serve! REVERSE-SEARED RIB EYE Servings: 2-4 INGREDIENTS 1 1.5- to 2-inch-thick rib eye steak Salt 3 tablespoons vegetable oil Optional: Pepper PREPARATION 1. Liberally season steak on all sides with salt and (optional) pepper. Place steak in fridge for 1 to 24 hours. If leaving for more than an hour, cover with plastic wrap. 2. Preheat oven to 275°F/140°C. 3. Transfer steak to a wire rack on top of a baking sheet. 4. Bake for about 20-30 minutes, until the internal temperature reaches about 95°F for medium-rare. 5. Preheat cast-iron skillet on high heat for 10-15 minutes. 6. Add oil to skillet. 7. Once oil starts to shimmer but before it starts to smoke, carefully place steak in pan. 8. Cook for about 1-2 minutes per side, or until the internal temperature is a few degrees below 135°F/57°C and a dark crust has formed. 9. Rest the steak on a cutting board or wire rack for about couple minutes. 10. Slice steak and serve! The warmer the water the more dense the fog and depending on how much dry ice and water you use depends on the scale of the fog effect you create. Watch our Chillistick video – this shows a small scale fog effect using 2 litres of hot water and around 500 g of dry ice pellets. The white cloud you see is water droplets just like in real clouds and because the cloud is heavier than air it falls to the ground, which makes for some great effects depending on how you wish to use the dry ice for your event.

Learn how to make a super simple, delicious lasagna...in a skillet! Everything you love about lasagna but in one pot on the stove top. No dirty dishes, no pre-boiling anything, no pre-cooking, no assembling, just pure deliciousness without all the fuss. What you'll need: 1-2 Tbsp extra virgin olive oil 1/2 medium yellow onion, chopped 1/2 pound 85/15 ground beef 1/2 pound mild Italian sausage, casings removed 8 'oven ready' lasagna noodles 1 (28 oz) can crushed tomatoes 1 (8 oz) can tomato sauce 1/2 cup water 1/2 tsp salt 1/2 tsp sugar 1/2 tsp garlic powder 1 tsp dried oregano 1 cup (7.5 oz) ricotta cheese 6 ounces mozzarella cheese, shredded In a large skillet (12"), saute onions over medium-high heat in olive oil just until translucent. Add in beef and Italian sausage. Crumble and cook meat until browned well. Drain off fat. Add in lasagna noodles that have been broken into pieces. Pour on top: crushed tomatoes, tomato sauce and water. Bring to a simmer, reduce heat to low, cover and cook 10 minutes WITHOUT stirring! After 10 minutes, carefully remove lid and stir. Add in salt, sugar and garlic powder. Mix well and separate any noodles stuck together. Replace lid and cook an additional 10 minutes, stirring occasionally. After the second 10 minutes is up, turn off heat, remove lid, stir well and again separate any stuck noodles. Sprinkle oregano over top and dollop spoonfuls of the ricotta cheese over top. Replace lid and let rest for 5 minutes. When the ricotta is melted, sprinkle the mozzarella on top and place under the broiler for 2-3 minutes just to melt and brown the cheese. Let rest again for a few minutes and serve. Serves 6 well. Enjoy! **If you are using the NON-oven ready noodles (the ones you must cook first before making a traditional lasagna), keep the same amount of noodles, add an additional 1/2 cup water and another 5-10 minutes on the cooking time. If you have any questions or to read the full post, visit http://www.steamykitchen.com/101 Chinese Braised Tofu with Ground Pork Recipe ingredients: 1 block firm or extra firm tofu salt and freshly ground black pepper 1 tablespoon cooking oil 1 pound ground pork, beef, turkey or chicken 1 clove garlic, very finely minced 1 teaspoon grated fresh ginger 1 cup chicken broth 2 tablespoons oyster sauce 1 tablespoon soy sauce 1/4 cup cool water 1 teaspoon cornstarch1/2 stalk green onion, chopped directions: 1. Drain the tofu and place on towels or paper towels. To get rid excess water in the tofu, place another towel on top of the tofu, then place something flat and heavy (like a cutting board or a cast iron frying pan) on top. You can weigh the cutting board down by putting a couple of cans of soup on top. Let sit for 10 minutes. Cut the tofu into several slices 3/4" thick. Season on both sides with salt, pepper. 2. Heat a wok or large saute pan over medium-high heat. When hot, swirl in the cooking oil. Very carefully and slowely slide in the tofu slices in one layer. Fry for 1 minutes, then flip to fry the other side for 1 minute until both sides are browned. Remove the seared tofu to a clean plate. 3. To the same wok, add in the ground meat. Saute until browned, about 2 minutes. Add in the garlic and the ginger and stir fry for 30 seconds. 4. Add in the chicken broth, oyster sauce and soy sauce. In a small bowl, whisk together the water and the cornstarch. In the wok, stir in the water and cornstarch mixture and bring everything to a simmer. Lower the heat to medium-low. Let simmer for 5 minutes, until thickened. Mix in green onion. Serve with rice.

Preheat the oven to 375 F and prepare the grill with Mojoe Girdle. 2. Mix salt and pepper to ground chuck and roll ground meat into baseball size balls and keep them aside. MAKING For Donkey Sauce 3. Chop off the end of the garlic and expose the cloves. Place the garlic on an aluminium sheet and drizzle extra virgin olive oil over it. Season with salt and pepper. 4. Wrap the foil around the garlic and place it in the oven. Roast for 1 hour 15 minutes. Squeeze out the contents of the garlic while it is still warm and set it aside. 5. In a bowl, mix together mayonnaise, yellow mustard, Worcestershire sauce, salt and pepper together. Add roasted garlic pulp and mix it all together. For Mornay Sauce 6. In a vessel, heat unsalted butter. Add all purpose flour and whisk it all together. Make sure it does not change color. 7. Add warm milk in the vessel, stirring constantly such that everything is well incorporated. Season with sea salt and nutmeg. Keep stirring to avoid lump formation. 8. Add cheese slices and melt everything in. Pour in more milk until the sauce reaches a desired consistency. Set it aside. For Pig patty 9. Separate bacon and put it in a pot of water. Bring water to a boil. Let the bacon simmer for 1 1/2 hours such that the bacon is tender and is almost falling apart. 10. Drain off the water and form patties out of the bacon. 11. Clean the mojoe griddle with salt and oil. 12. Heat up some vegetable oil and place the pig patty over the griddle, cook them on both sides. For Cheese Patties 13. Place the ground meat balls on the griddle, press it with a bacon press to 1/3 inch thickness and grill them on both sides. 14. Spread Mornay sauce over the patties, layer with american cheese slice. Drizzle some chicken stock mixed with water over the griddle, cover and let steam form. Cook the patties under the lid until the cheese melts. FINALIZING 15. Toast bottom side of burgers in unsalted butter 16. Spread some donkey sauce over both top and bottom burger halves. Place pickle slices, cheese patty, pig patty, onion slices, a couple of tomato slices and some shredded lettuce. Place the top on to make the burger. SERVING 17. Arrange the burgers on a serving dish and serve. Stuffed Cabbage My Mommom's Way! Noreen's Kitchen
Greetings! Happy New Year. As is my yearly tradition on this day, I prepare our favorite New Year's Day feast of Stuffed Cabbage and pork loin. A bit odd? Yes, but very delicious! Stuffed cabbage is peasant food and delicious food. My Mommom made the stuffed cabbage in our family and I make it just like she did with very simple ingredients and flavors. I add the garlic and onion powder, she did not. The meat is simple and we allow each person to salt it as they desire. I do not add any salt or pepper in the preparation of this dish, one of the few meals that I do not season copiously. Because I simply does not need it! Time consuming? Yes, but with a little preparation and the employment of a few basic kitchen appliances, you can have this put together in about an hour and in the oven to cook for about 2 to 3 hours. Then you can do other things while it bakes. This is how I make stuffed cabbage. 2 large heads of cabbage 1 pound Ground Pork 1 Pound Ground Beef 1 Pound Ground Veal 2 28 ounce cans crushed tomatoes 1 28 ounce cans diced tomatoes 2 1 pound bags of sauerkraut 1/2 gallon of tomato juice 2 cups rice In a large mixer bowl combine meat, mixing until well incorporated and blended together. Add in 2 cups of tomato juice and blend. Add in Rice and blend well. Cover meat mixture and set aside while you prepare the cabbage. Remove core from cabbage with a paring knife, keeping the head in tact. Place head of cabbage in a deep bowl, core side down, with about 3 cups of water in the bottom. Cover bowl with plastic wrap and place in microwave for 10 minutes. Check for doneness and allow to cook for and additional 5 minutes if necessary. You want the leaves to be pliable and soft. Remove head of cabbage from bowl to a pan. Separate the leaves. When you reach the center of the cabbage, chop it into small cubes and place it in the bottom of your baking pan along with a bit of sauerkraut and crushed tomato and diced tomato. Taking one leaf of cabbage, cut the stem out of it. Fold the leaf over itself where you cut out the stem. Take a bit of meat filling and place it at the end closest to you, now roll the meat into the leaf like you would roll a burrito or an egg roll, folding in the sides as you go. Place the cabbage roll in your baking dish. Continue until you have filled up the pan. Chop any remaining cabbage leaves and sprinkle over the rolls, along with the remaining sauerkraut from one packet and the remaining diced and crushed tomatoes. Pour 3 cups of tomato juice over the pan. Place a piece of parchment paper over the pan then cover with 2 layers of heavy duty aluminum foil. Place pan on a baking sheet that is lined with both foil and parchment for easy clean up. Bake in a 350 degree oven for 2 to 3 hours until the meat is cooked through and the rice is soft. I used one packet of sauerkraut, 1 can of diced tomatoes and 1 can of crushed tomatoes and 1 head of cabbage for 1 large 9 x 13 baking pan of cabbage. I made two pans. I also made 1 pan of porcupine meatballs which I cooked in 1 additional can each of the crushed and diced tomatoes. You can make this as large or as small as you like. You can make a small pan of it with just one head of cabbage and a pound of meat and a bit of rice. Make sure that you use enough of the tomato juice so that your rice will steam properly. I know this is a very long and drawn out recipe, But it is very worth it in the end. I hope you try this and I hope you enjoy it. As always, Happy Eating! and Happy New Year.

Mix until meat is sticky. 1.Combine garlic, ginger, soy sauce, sesame oil, potato starch, cabbage, and chive. Mix them very well in a bowl. 2.Scoop a spoonful of filling onto the middle of the gyoza skin. 3.Apply water for skin edge with your finger. Fold in half and pinch pleats into the edges, then wrap up. 4.Heat sesame oil in the pan and lay gyoza in single layer. Spread half the broken spaghetti over mixture. Cover spaghetti with one whole jar of pasta sauce. Add the other half of dry spaghetti. Cover with the second jar of pasta sauce. Use a spoon to submerge dry pasta into sauce.Lock on lid; turn steam release handle to "Sealing." Press [MANUAL] button to activate pressure cooking mode; use [- or +] button to adjust cooking time to 7 minutes. After cooking time is finished, wait 10 minutes before carefully turning steam release handle to "Venting." Download the new Tasty app: http://tstyapp.com/m/mFqUXJtD3E Reserve the One Top: http://bit.ly/2v0iast HOMEMADE DUMPLINGS Servings: makes 24-32 dumplings INGREDIENTS 4 cups flour 1 teaspoon salt 1¼ cups warm water 2 cups red cabbage 2 cups green onions, sliced 6 cloves garlic, minced 4 tablespoons ginger, minced 2 tablespoons sesame oil 2 tablespoons soy sauce ½ pound ground pork ½ teaspoon pepper 1 teaspoon salt ¾ cup mushrooms, diced ¾ cup carrots, diced ½ pound shrimp, peeled and deveined Sauce ¼ cup soy sauce ¼ cup rice wine vinegar 1 teaspoon sesame oil 1 teaspoon crushed red pepper flakes PREPARATION 1. Combine the flour, salt, and warm water and mix until well combined. 2. Roll out dough on a floured surface and knead until smooth. 3. Separate the dough into 4 equal parts. 4. Roll out the piece into a thin log and divide into 6 or 8 pieces depend on the size of dumplings you want. 5. Lightly flour the divided piece of dough and roll out piece to a thin circle roughly 4-inches in diameter. 6. Keep the dumpling wrappers separated with parchment paper, and repeat with remaining dough. 7. Combine cabbage, green onions, garlic, ginger, soy sauce, and sesame oil and mix until well incorporated. 8. For the pork filling, combine the ground pork with salt, pepper and 1 cup of the cabbage mixture and stir until well incorporated. 9. For the veggie filling combine mushrooms and carrot and microwave for 3 minutes, until soft. Add 1 cup of the cabbage mixture and stir until well incorporated. 10. For the shrimp filling, combine shrimp with 1 cup of the cabbage mixture and stir until well incorporated. 11. To assembly dumplings, add roughly 1 heaping tablespoon of filling into the center of a dumpling wrapper. 12. With your finger lightly coat 1 half of the outside of the wrapper with water. 13. Seal the dumplings using your prefered method. 14. With pleating, start from one side and pleat the half of the dumpling closest to you, keeping the other half still. 15. Heat oil on medium high in a pan and add a few dumplings, cooking them in batches. 16. Once the bottom of the dumplings start to brown, add in a splash of water and cover witg a lid. 17. Steam for roughly 5 minutes, or until dumplings are cooked and water has evaporated. 18. Enjoy! THE ART OF DUMPLINGS - Pork & Chives Potstickers [锅贴饺子]
Potstickers also know as guo tie [锅贴]. It is a type of pan fry dumplings. In this video, you will learn 2 of my secret technics that will ensure your pot stickers turn out perfect. How to knead the dough and make the skin by hand, please check my soup dumplings video: https://youtu.be/aVsgO5h_xhk **LIST OF INGREDIENTS FOR POTSTICKERS** **FOR THE SKIN** - 10 ounces of bread flour - 4.5 ounces of water - 1/2 tsp of salt **FOR THE FILLING** - 0.5 pound of ground pork (15% fat) - 1.5 ounces of ginger and garlic water - 1 tbsp of soy sauce - 1.5 tsp of dark soy sauce - 1 tsp of sugar - 1/2 tsp of salt or to taste - 1 tsp of white pepper - 4 ounces of non-flavored chicken stock (Homemade chicken broth video link: https://youtu.be/sEMzsMFtPBk) - 5 ounces of Chinese leek (diced) - 3 ounces of carrot (minced) **HOW TO MAKE THE SKIN** - In a stander mixer, add 10 ounces of bread flour and 1/2 tsp of salt. Turn it on for 20 seconds. - Then slowly add 4.5 ounces of water from the side of the bowl. Keep mixing it for 3-5 minutes. - Turn off the machine and switch paddle with the hook attachment. Start it with low speed. Let it run for 2 minutes then increase the speed to medium and keep it on for 5 minutes. - 5 minutes later, the dough should be pretty smooth.Put this in a bowl. Cover it. Let it sit at room temp for 40 minutes. - 40 minutes later. Knead the dough into a round shape. Use your forefinger to poke a hole in the middle. Stretch it to make a big ring. Cut the ring off then you have a long even piece of dough. - Roll this to make it thinner. Cut it into small even pieces. Each one should be 0.4 ounces. You can use a scale if needed. - Sprinkle some flour so they don’t stick to each other. Flaten them one by one. - Roll it into thin sheets. Use your thumb to hold the middle. Right-hand rolls it. Left-hand holds and turns it. - When you get it into a small round wrapper. Then roll it few more times in one direction so you have an oval shape pot sticker skin. **HOW TO MAKE THE FILLING** - In a mixing bowl, add in 0.5 pounds of ground pork (I will recommend 15% fat), 1.5 ounces of ginger and garlic water which I just simply blend the ginger and garlic with water. 1 tbsp of soy sauce, 1.5 tsp of dark soy sauce, 1 tsp of sugar, 1/2 tsp of salt, 1 tsp of white pepper or you can use black pepper. - My first secret technique is adding 4 ounces of chicken stock in batches. The chicken stock I used is non-flavored. If you use flavored broth, you will need to adjust the saltiness in this recipe. - You just let it run for 1 or 2 minutes until the meat absorbs the liquid. Add another batch of stock and keep doing this until the liquid is gone. You can also do this by hand you just need to put a little more effort in. By doing this, your filling will turn out incredibly juicy. - Once the liquid is all gone. Increase the speed to high and let it run for 5 minutes. This is my second secret. As the machine spins, you should be able to see that the meat starts pulling away from the side of the bowl. That means the protein in the meat are being developed which will make your filling turn out with a better texture. If you don’t have a stander mixer, you can also do this by your hand. You just mix your meat within 1 direction for 8-10 minutes until you get the right consistency. It is soft and gooey. Almost like a meat paste. - Add 5 ounces of leek, finely diced and 3 ounces of minced carrot. - Mix them until well combined. You can cook a small amount in a microwave to see if you want to adjust the flavor. **CLOSING / STORING / FRYING THE POTSTICKERS** - Take some filling. I use about 1 tbsp. Put it on the wrapper. Fold it across. Pinch the middle to make sure it is tightly packed. Then sew 2 sides. It is easy and fast. - The amount I gave should be able to make 30-40 pot stickers. If you can’t finish them all. Leave some space between them and put them in the freezer. Once they are frozen, put them in a bag. It will last 2 months. Whenever you want to eat them again, don’t need to defrost, just directly fry them. Which is what we are going to do next. - Add a little bit oil in a cast iron pan just to cover the bottom. Add your pot stickers. Normally, a non-stick pan will be great for pot stickers but the pan I have, the non-stick layer is ruined. I didn’t want to use that so I am using a cast iron pan to do this and it works just as well. - When you see the edge starts sizzling. Add some water in. There should be a lot of steam coming out as you add the water. The amount of water should reach 1/2 way up the dumplings. Then cover it. Cook this on medium heat until the water is all gone. It will take about 3-5 minutes. - Once the water is evaporated, you can check the bottom. If you see it is golden brown and it is crispy, you are done. Take it out. When you plate it, It is important to let the golden side face up. In this way, the crispy bottom will stay longer.

Derailment and Rerailing of FEC Ringling Brothers Circus Train - Part II 01.16.2017
While retrieving the last cut of RBBX circus cars, FEC 714 and one of the axles on the first car unfortunately went on the ground just 200 feet from where I was. The fact that it was a 6 axle engine with all that weight on a dated industrial spur gave in to weak track which ultimately twisted as the engine negotiated a tight curve with the pax. This tied up the entire circus operation as the cars were stuck on a dead end spur. What this video is about is the quick and efficient efforts the railroad made to rerail the engine. Seeing a crane lift the 300k pound locomotive was definitely a highlight. Of course, was nice shooting the bull with Colin Dell, Dylan Scott, and Trainmanrisko. At the end is a look back at five years of railfanning the Circus Train. Godspeed to the men and women working for the circus as they move on from their time with Ringling. Shoutout to Chad Ridge of Supersize Orlando who I met as the train stopped. Braised chicken with vegetables (Dakjjim:안동찜닭)

There are a few different versions of jjimdak in Korean cuisine, depending on the region it comes from and the ingredients used. The popular Andong jjimdak is a special dish from the city of Andong. This dakjjim recipe that I'm introducing to you to today is Andong style, which so many people have requested. I'll post a hot and spicy dakjjim (called dakbokkeumtang or dakdoritang) recipe someday in the future. Ingredients for 4 servings: Chicken thighs, starch noodles, soy sauce, oyster sauce, rice syrup (or corn syrup), dark brown sugar, vegetable oil, dried red peppers, potatoes, garlic, cucumber, green onions, carrot, white mushrooms, onion, green chili peppers, red chili peppers, ground black pepper, sesame oil, and sesame seeds. Total preparation time: 50 mins to 1 hour. Directions: Prepare chicken and noodles: Trim the excess fat from 3 pounds of chicken thighs (or breasts or wings) and cut them into bite-sized pieces (1 inch x 2 ½ inches). Rinse the chicken in cold water and soak it for a few minutes. Drain and set aside. Soak 100 grams (3.5 ounces) of starch noodles in cold water. Make sauce: Combine ¼ cup soy sauce, ¼ cup oyster sauce, ¼ cup rice syrup (or corn syrup), and 1 tbs dark brown sugar in a bowl. Set aside. Prepare vegetables: Cut 3 peeled medium sized potatoes into 1½ inch thick chunks. Slice 1 medium sized carrot into slices 1/8 inch thick. Slice 1 medium sized onion. Chop up 1 red chili pepper and 2 green chili peppers. Slice 1 cup's worth of white mushrooms into bite-sized chunks. Cut 5-7 green onion stalks into pieces 2 inch long. Shred the white parts of the green onions thinly lengthwise, and soak in cold water for 10 minutes before draining. Let's cook! Heat up a wok or a shallow skillet. Add 1-2 tbs vegetable oil. Cut 2-3 dried red peppers into pieces ½ inch long. Add them to the heated oil and stir-fry for 10-15 seconds before taking them out. Add the chicken. *tip: to prevent yourself from getting burned from flying oil, first place the chicken on the edge of the pot and then push it in with a wooden spoon. Stir the chicken with a wooden spoon a few times. Let it cook with the lid open for about 3-5 minutes. Turn the chicken over, give it a quick stir, and let it cook with the lid open for another 3-5 minutes. Add minced garlic and ginger and stir it for a minute. Add the potato chunks, the sauce, and 2½-3 cups of water. Cook for 10 minutes over high heat with the lid closed. Open the lid and add carrot and onion and continue cooking for another 10 minutes. Keep the lid open. Add soaked and drained starch noodles, sliced red pepper, green chili peppers, white mushrooms, and cucumber. Keep stirring for 7-10 minutes over high heat until the braising liquid has thickened and the noodles look translucent. Turn off the heat and add 2 ts ground black pepper and 1 tbs sesame oil. Mix it together Transfer to a serving plate and garnish with chopped green onions and sprinkle some sesame seeds over top before serving. Enjoy it with rice!

Four Cheese Spaghetti Squash Serving Size: 4 INGREDIENTS 1 spaghetti squash oil, to brush salt and pepper, to season 1/4 cup butter 1/4 cup all-purpose flour 1 3/4 cups milk 1/2 cup parmesan cheese, divided in half 1/4 cup cheddar cheese 1/4 mozzarella cheese 1/4 monterey jack cheese chopped parsley, for garnish PREPARATION Preheat oven to 400º F / 200º C. Half the squash and scoop out seeds. Brush the inner flesh with oil, season with salt and pepper. Place squash cut side down, and roast until tender, about 30 minutes. Then let cool. Use a fork to scrape the squash strands and “fluff” it up. In a saucepan, melt butter, stir in flour, and cook for about 2 minutes, stirring continuously. Slowly stir in milk and beat until there are no lumps. Bring the sauce slowly to boil, stirring the whole time until the sauce is thickened. Add all four cheeses to the sauce and stir until melted. Pour the sauce into the squash halves, sprinkle salt and pepper to taste, and stir to ensure the squash is coated in the cheese sauce. Bake until the filling is hot, about 5 minutes. Garnish with chopped parsley. Serve immediately and enjoy! Chicken Enchilada-Stuffed Spaghetti Squash Serving Size: 4 INGREDIENTS 1 spaghetti squash oil, to brush salt and pepper, to season 2 cups of shredded chicken, cooked (rotisserie chicken) 1/2 teaspoon cumin 1/4 teaspoon garlic powder 1/8 teaspoon chili powder 1/4 teaspoon salt 3 tablespoon cold water 1/3 cup onion, chopped 1/3 cup bell pepper, chopped 1/4 cup black beans 1/2 cup red enchilada sauce 1/2 cup shredded Mexican cheese blend PREPARATION Preheat oven to 400ºF / 200ºC. Half the squash and scoop out seeds. Brush the inner flesh with oil, season with salt and pepper. Place squash cut side down and roast until tender, about 30 minutes. Then let cool. In a medium skillet, bring up to medium heat. Add onion and bell pepper, cumin, garlic powder, chili powder, and salt. Add water, then cook and stir until veggies have mostly softened and browned and water has evaporated, about 3 minutes. Transfer the veggies to a large bowl. Add chicken, black beans, 1/2 cup enchilada sauce, and 1/4 cup cheese. Mix until uniform. Use a fork to scrape the squash strands and “fluff” it up. Divide enchilada mixture between the hollow squash halves. Sprinkle tops with more cheese. Bake until filling is hot and cheese has melted, about 10 minutes. Serve immediately and enjoy!
